The Coffee
Villamaría coffee production in Caldas, Colombia, centres around the “Jamaica” processing station, which has transformed local practices. Farmers now sell whole cherries for better prices and reduced labour—an uncommon method locally. This system benefits nearby communities and fosters long-term global relationships. The natural process involves delivering fresh cherries to La Aurora for sorting and resting. They move to Jamaica for 48 hours of fermentation, then dry for approximately 15 days in a greenhouse, finished by 3-4 days in a mechanical dryer.
