The Coffee
This Catuai coffee, from the Cafe Ceres micromill in Santa Maria de Dota, San José, was produced by Stephanny Fernandez Elizondo and her mother, Alexandra. They focus on consistent growth and daily quality improvements.
For this Honey-processed lot, coffee cherries were sorted by floatation to remove unripe or overripe fruit. They underwent a 72-hour fermentation in plastic bags before pulping, followed by another 48-hour fermentation in plastic bags. The coffee was then dried on raised beds for 14 days, with regular turning for even drying.
Suitable for all brewing methods.
