The Coffee
50% Brazil Mesodo – Honey:
Sourced through Mio, Fazenda Mio is owned and run by the Pellicer family, in the Sul de Mias region of Minas Gerais, southeast Brazil. Roughly 32% of the farm is planted with coffee trees, with Mio growing various varieties.The farm estate in Monte Santo de Minas (900 to 1100 masl) covers 1,976 hectares in between the Cerrado and Atlantic Forest biomes. Four hundred hectares of Arabica cultivars. The process is Honey — Mechanical de–pulping of the cherries at the wet mill while ensuring the mucilage stays attached to the beans. The sticky part of the cherry contains high amounts of sugar, resulting in a pronounced body and developed, chocolaty sweetness in Mió’s coffee.
50% Colombia Madremonte– Washed:
Known as Madremonte, this coffee bears the name of a mythical figure from Colombian folklore—a guardian spirit of the forests who embodies the harmony between nature and humanity. This coffee is a tribute to the dedicated women of Huila, who nurture their families and cultivate the land with unwavering determination. These women, mothers and providers, epitomize resilience as they navigate the challenges of coffee production in this rugged terrain. Each bean is a testament to their skill and dedication, carrying within it the essence of the land they call home
