The Coffee
This coffee is produced by the Peralta family, grown in the high-altitude region of Nueva Segovia, Nicaragua, Santa Maria de Lourdes is a coffee farm renowned for its rich biodiversity and commitment to sustainability. This coffee is from the Esperanza Plot.
They use a meticulous anaerobic natural process where cherries ferment in airtight tanks for up to 72 hours, submerged in water to enhance flavour complexity. After fermentation, they dry for up to 30 days on covered beds, ensuring even drying and preventing defects. Suitable for all brewing methods.
